Salmon & Avocado
Take a familiar ingredient and make it fancy. Who says posh nosh needs to be cruel?
- Happiee Salmon flakes
- Blanch salmon flakes in boiling water for 5 secs, and cool it in an ice bath. Let sit in the chiller.
- Make avocado puree
Take a ripe avocado, season with lime juice, salt and pepper and either blend it or mash it with a fork till smooth.
- Cut shallots into thin slices or brunoise.
Lay the salmon flakes flat on a heat-resistant plate. Gently brown the surface with a kitchen torch.
Sprinkle diced shallots evenly on the salmon, put avocado puree on and garnish with dill.
